Another Christmas classic made vegan! I must admit, in our house brussel sprouts were normally just boiled and served with a bit of butter. A classic way to serve them though is with bacon bits and this is my vegan take on it.
Now you could definitely make some kind of vegan bacon from scratch yourself but I had this tempe in the fridge so decided to use it for this. There are loads of different vegan bacon options out there and tempe isn’t for everyone so you could use any of them.
You will need:

- 2tbsp maple syrup
- 6 portions vegan bacon
- 6 cups brussel sprouts – I’m using frozen one for this but it doesn’t matter
This maple smoked tempe bacon was great for this recipe!
How to make it:

Boil the brussel sprouts in lightly salted water until cooked. Meanwhile grill the vegan bacon until crispy – about 10 mins, flipping halfway.

When both are cooked, drain the brussels and chop up the vegan bacon bits. Finally, drizzle with maple syrup and sprinkle with salt and pepper to taste.
It’s so simple and yet another way to enjoy your Christmas dinner with all the trimmings – with none of the cruelty!
