Okay, so cheesecake isn’t very Christmassy, neither are oreos – but they are super delicious when mixed and VEGAN! So this is my recipe for an decadent oreo vanilla cheesecake. All vegan and terrible for you – but very tasty!
You will need:

- 4 packs of oreos
- 5 cups vegan cream cheese
- 2 cups cashews, soaked in boiling water for 10 mins (minimum)
- 3 cups plant milk
- 3/4 cup maple syrup
- 1/4 cup icing sugar
- 1 tsp vanilla extract
- 1/2 cup vegan margarine
How to make it:

First, crumble 3 packs (hold back 3) oreos in a food processor along with 1/4 cup of vegan margarine and press firmly into a greased springform pan. Set this is the fridge while you prepare the rest.

Next, beat the cream cheese, remaining margarine, maple syrup and vanilla essence either with hand beaters or a stand-mixer.

When the cream-cheese mix is well combined, drain the cashews and blend with the plant milk until completely smooth.

Beat the cashew cream and icing sugar into the cream-cheese mix, then crumble the 3 remaining oreos from the 3rd pack into the mix, and fold in.

Pour this mix over the oreo crumb base and decorate with the remaining oreos (these ones look a bit paler as they are from a Christmas tin). Ideally you should have one oreo per slice but I messed up the placement and didn’t want to start slotting in random ones all over the place.
Pop the cheesecake in the fridge for at least 12 hours – ideally 24 – to set through. If you’re impatient it will set in the freezer in 4 hours. Don’t let this sit out of the fridge for too long though – take it out just as you are serving, otherwise it will start to melt. No one wants a melted cheesecake!

And there you have it! A deliciously decadent cheesecake that noone would believe is vegan!
