Anyone in Europe will know this Summer was HOT. I was not about the cooking life – this is past tense as the west of Ireland has cooled to a pleasant 15-17c, which I am LOVING. This is the reason I haven’t posted in a month , as much as I love writing about my vegan cooking adventures, the weather was just TOO NICE to sit inside at a computer on my days off! Sorry! Anyway, not wanting to cook basically resulted in a diet of fruit, salad and sandwiches (and take out pizza, obvs). In order to spend as little time as possible in my windowed-on-three-sides-kitchen (the non-windowed side is the north facing one!) I had to come up with ways to make quick and refreshing meals. That is how this three ingredient salad dressing was born. No, salt and pepper don’t count!
You will need:
- Alpro single cream
- 1 cup frozen peas
- 1 tbsp garlic powder
- Salt and Pepper to taste
Method:
Put the ingredients in a blender. Blend. Pour over your salad. Go back outside and eat your delicious meal in the unusual sunshine (SPF required). Love life.
That’s it, a short recipe but very rewarding! Goes so well with my Staple Tofu Recipe, your favourite greens and sweetcorn. And a glass of vegan wine.
